Gong Mei is a white tea. It is grown mainly in the provinces of Fujian province, China. Because this tea is harvested later than white peony, it's liquor is slightly darker in color and stronger in taste. The infusion is golden yellow and thus darker than other white teas. 

White tea is also very suitable for aging because of tea enzymes left in the tea buds that further oxidize the tea and change it to more mellow and fruity taste. According to local farmers: "One year is tea, three years is medicine and seven years are treasure!"
